The Allegro is the largest oven in Alfa’s Forninox line. Its size and technical features make it more akin to a commercial oven. It has been designed to feed a large crowd.

Fire the Pizza Oven Up.

Fire up the ALFA Forni Allegro only 20 minutes before dinner.

500°C (1000°F) in just 20 minutes.

Make dough balls 3 hours before. Stretch the balls, top them and bake at 500°C (1000°F).

Cook your pizza in only 90 seconds.

Cook the pizza in 90 seconds by turning it a couple of times to make it brown evenly.

Top version or dedicated base?

You choose. The Allegro oven is available in the top version to place it on an existing shelf, alternatively you can buy its dedicated base.

The base of the Allegro is black and it is equipped with large concealed side shelves, a food warmer compartment and a shelf for holding wood or a gas tank. The 4 swivel casters with brakes make it easy to move.

  • The handy folding side shelves are large enough to place ingredients, kitchen tools or all the things needed for baking. You can fold them when not in use to reduce bulk.
  • The Allegro is supplied with a warming drawer under the cooking chamber to keep food warm or let it rest until it is served.
  • The shelf allows to organise and store wood in a clean, orderly manner, or creates an optimal area for storing your gas tank.
  • The 4 exposed casters with brakes are designed to make the oven easier to handle and to move it in every direction.

Instructions for using a wood-fired oven.

Firing up the oven

Place the wood basket in the centre of the cooking chamber and put some small logs to light the fire. Three or four small logs are enough to heat it up.

Keeping the flame in the operating oven

After about ten minutes, move the basket to the left side of the oven and close the door for ten minutes. To keep a constant temperature, add small logs no more than 5 cm (2 in) thick every 15 minutes.

Extinguishing the fire

At the end of cooking, close the door and let the fire burn out.
Remove the ash when the oven is completely cool.
